Lobster Holiday Appetizers

Seafood dinner is a holiday season tradition spanning the ages. And there is no better seafood than lobster. With so many spectacular appetizer recipes, including lobster in your spread this holiday season isn’t only for entrees. Here a few lobster recipes to whet your appetite for the main course.

Lobster Salad on Cucumber

Ingredients: a cucumber, 1lbs lobster meat, ½ cup mayo, ¼ C diced red pepper

-Slice cucumber into 1/8-inch-thick slices

-Chop lobster meat

-Toss lobster meat with mayo and red pepper

-Add salt and pepper to taste

-Spoon mixture onto each cucumber slice. Serve on cracker if desired for added support.

Lobster Bites

Ingredients: a skinny baguette, 1lbs lobster meat, ½ cup mayo, ¼ C diced celery

-Preheat oven to 350 degrees

-Slice baguette into 1/8-inch-thick slices, lay on cooking sheet and place in oven until toasted

-Chop lobster meat

-Toss lobster meat with mayo and celery

-Add salt and pepper to taste

-Spoon mixture onto each toasted baguette slice. Serve.
