Salmon-Stuffed Crab Cakes

1Lbs crabmeat
1/4C chopped green onions
1/4C diced roasted red peppers
2Tbsp mayo
1/2Tsp sea salt
1/2Tsp white pepper
3oz smoked salmon
1C panko breadcrumbs
1/4C Canola oil
Preparation
Thoroughly stir together crabmeat, onions, peppers, mayo, salt and pepper in a large bowl. Divide mixture into 8 flattened 3-inch patties.
Divide smoked salmon into 4 pieces, place in center of 4 patties and top with remaining crab lumps. Press edges of patties to seal and coat in the panko breadcrumbs.
Heat oil in a large skillet over medium-high heat and add cakes. Cook 3 to 4 minutes on each side. Set aside and let rain on paper towels. Serve immediately with garnish and dipping sauce of your choice.
